Fat-Soluble vitamins are stored in our fat cells for later use and have a lower risk of becoming deficient. However these vitamins also have a potential for toxicity whereby we should pay attention to the maximum intake.
One fat soluble vitamin is:
Vitamin A – essential in production of red and white blood cells, blood vessel health, immune system efficiency and cell growth and development (particularly bones).
RDA – 2300-5000IU/daily
100g cooked sweet potato provides 380% RDA.
100g cooked carrots provides 340% RDA
100g curly kale provides 270% RDA
Make sure you eat those vegetables!
